I Tried It: DIY Healthier Microwave Popcorn

Let’s talk snacks!  Because who doesn’t enjoy an afternoon treat?  The try of the day is something I’ve been doing for the past year whenever I get the midday munchies at work: do-it-yourself microwave popcorn.  It’s a much healthier alternative to pre-packaged microwave popcorn, which often contains artificial flavors, trans fats, and bags lined with perfluorooctanoic acid (a known carcinogen!).

diy-healthy-microwave-popcornHave no fear.  Popcorn doesn’t have to be an unhealthy buttery mess.  In its unadulterated state, popcorn is a whole grain full of fiber and polyphenol antioxidants.  My favorite recipe is simple, delicious, and (somewhat) nutritious!  The initial investment for the ingredients may seem expensive, but you’ll get endless bags of popcorn out of it and you’ll be taking another step towards living a healthier life.  So, without further ado, see below for my ridiculously easy DIY microwave popcorn recipe.  Try it out, add your own twist with seasonings & spices, and let me know how it goes!

Ingredients:
– Organic Extra Virgin Coconut Oil
– Non-GMO White Popcorn Kernels
– Sea Salt Powder
– Brown Paper Lunch Bag

How-to:
Scoop 1/4 cup of popcorn kernels into a brown paper lunch bag.  Add approx 1 tbsp coconut oil.  Sprinkle with sea salt powder.  Fold down the top of the bag and shake, shake, shake.  Pop the bag in the microwave for 3-4 minutes and remove when the kernel pops start to slow.  Enjoy!
Insider tip: When you remove the bag from the microwave, shake it gently to help distribute the heat and stop the popcorn from potentially burning.
